What is Hot Pot?
Our definition:

Chinese hot pot, sometimes people refer to as Chinese fondue, consists of a simmering metal pot with broth at the middle of the table. Ingredients are brought to the table uncooked so you can cook it the way you want it. Typical dishes are raw meet (thinly sliced), seafood, vegetables, mushrooms, and our well-known handmade noodles. Then the cooked food is dipped into our special sauces. You can then add our own making hot sauce. Our pot is divided into 2 separate sections: one side can be plain broth and the other can be intimidating spicy hot to fit different tastes.
We provide both meat-based broth and vegetable broth so vegetarian can enjoy the same experience.
Is hot pot style cooking healthy?
Yes.Since hot pot is not typical stir-fried or deep-fried, so there is no excess oil in cooking. All the ingredients are natural without added preservatives. This is as healthy as you can get in eating.
Is hot pot only for winter?
No.Some people have misconception that hot pot is mainly for winter. This is simply not true. In China, hot pot is served all year round as restaurants provide sufficient air-conditioning to ensurecustomers enjoying their foods in a comfortable temperature environment. More importantly, the broth and the ingredients will be modified for summers. In fact, the summer broth and ingredients can actually benefit your health by reducing your body "internal heat" in the summer.
History
No one really knows when and where hot pot is originated. However, we do know that hot pot has been around more than 1,000 years in China. Hot pot cooking style has spread to northern China during the Tang Dynasty (618-906 AD). By Qing Dynasty, hot pot has becoming popular and spread throughout China.
How does hot pot work?
The cooking pot is generally placed sunken in the middle of the table. The pot is fueled by a portable butane gas stove. Majority of the ingredients are uncooked: meat, vegetables and seafood. Noodle is an excellent item for the last since the noodle can absorb all the ingredients flavor that you have already put into the pot. In fact, most people will drink the broth at the end as the broth becomes a tasty and nutritional soup.
When you are ready to cook, put the portion and the ingredient you want into the pot. The purpose of hot pot is to enjoy the cooking process and your company at the same time. So, cook the ones you want and cook some more when you are ready to eat more, while you are having a good conversation with your company. However, some like to put an entire dish ingredient into the pot, so once the ingredients are done cooking, you can just keep eating while they are hot.
When the ingredients are cooked, please use the dipping sauce to enhance the ingredients' natural flavor.
